jamaican ackee and saltfish

 1 tsp black pepper
 1 sweet pepper, lulienne
 1 ¼ pounds ackee, cooked
 scotch bonnet bepper, chopped
 1 medium onion, chopped
 1 medium tomato, chopped
 Vegetable Oil
 2 stalk(s) escallion, chopped
 1 pound saltfish

put saltfish to soak in cold water for about 1
hour.

pour off the water; add fresh water and cook until
tender.

de-bone, flake, and rinse saltfish.

heat vegetable oil and saute onion; garlic;
escallion; tomato; scotch bonnet pepper and sweet pepper.

add flaked saltfish season with maggie all
purpose and black pepper.

toss lightly; cover and allow to stand over low
heat for about 2 minutes.

serve hot with your favourite side dishes.

tip: if fresh ackee is unavailable canned
ackee is a suitable substitute.
